First Time Use
When you first receive Your cookware, you should unpack everything and double-check the contents. If anything is missing or has been
damaged in shipping, please contact us as soon as possible so we may remedy the situation. Some products (e.g. cutlery, china) will arrive
in a separate shipment one or two days behind your cookware.
Watch the video/DVD that comes with your cookware, and or read the care and
use section of the cookbook or this website. This will give you a brief refresher course on
the basics of waterless and greaseless cooking, and remind you to...
Wash your cookware using hot soapy water that has two cups of white
vinegar added. Rinse with clear hot water and dry promptly. There will be traces of manufacturing oil applied in the
final polishing process that must be cleaned off before you use your
cookware the first time. If this oil is not removed, the cookware may not perform the way it is supposed to, and food will not release
properly. If you have cooked in your cookware without cleaning it first, this oil won't hurt you, and it
can still be removed, but it is easier to remove it before you use it.
Greaseless Cooking (Meats)
The special cooking surface used in pro-health ultra cookware allows you to pan-broil meats
(including fish, venison, steak, poultry and pork chops) without using any extra fat. grease or oil.
Start
by preheating the utensil on a medium high heat. After two minutes or so, the
pan should be sufficiently preheated. To test, sprinkle a couple of water drops in the piece. If the water beads up and dances around on
the surface, the piece is hot enough to sear meats.
Place the meat in the pan. At first, the meat will stick, but after a couple of minutes
it will release easily and turn a golden brown. You may flip the meat to brown the other side. if desired, add seasoning, sauces and/or
vegetables to finish cooking with the meat. Cover the unit completely with the whistle open. When the whistle
sounds, turn the heat off and close the whistle. Let the piece stand for 5 minutes, then serve.
Waterless Cooking (Vegetables)
Pro-Health Ultra's full body, 7-ply construction and specially designed cover allow you to cook all of your favorite vegetables using
little or no added moisture.
Begin by selecting an appropriately sized piece for the amount of food you are cooking. Your utensil should be
filled at least two-thirds to three-quarters full in order to work as designed.
Place your vegetables in a cold saucepan, and rinse them
with water. Drain the excess water off; whatever clings to your food naturally is all that is needed. Cover the utensil with the whistle
open and turn your stove to a medium low heat.
After a few minutes (depending on the amount of vegetables you are cooking), you should see
wisps of vapor begin to escape through the whistle. Momentarily, the whistle will get louder. Turn the heat off and close the whistle. For
crisp, hot vegetables, serve immediately. If you desire softer vegetables, let the unit stand with cover on and the whistle closed for a
few minutes, then serve.
Potatoes
Although potatoes contain natural moisture, they are also very starchy in comparison to other vegetables. Follow the directions above for
waterless cooking, but add enough water to cover the bottom of the pan. This moisture will be absorbed when cooking.
Roasting
Start by pre-heating an empty Stockpot or
Dutch oven on medium high heat. Sear the roast, chicken, or ham on all sides. Add in potatoes,
vegetables and seasoning as desired. Cover the stockpot and wait for the whistle to sound. Reduce the heat for the remainder of the cooking
time. Large cuts of meat will require 10-15 minutes of cooking time per pound.
Baking Cakes
Your cookware provides additional versatility and fuel savings by allowing you to bake cakes and breads on top of the stove. Begin by
preparing batter or dough according to the recipe, except to eliminate oil or shortening if called for. Preheat pan for 3-4 minutes over
low heat. coat interior with cooking spray and pour batter into the pan. Cover and reduce heat to the lowest setting. After 5-10 minutes of
baking time, give the cover a quick spin to form a water bead. When the whistle sounds, turn the heat off and flip the baked item onto a
plate to cool.
Simmering Soups
When simmering soups, you can reduce cooking time greatly by leaving the cover on. Turn the Pro-Health Ultra whistle to the "vent" setting
by aligning the "V" with the notch on the cover. this vent allows moisture & air to escape slowly without the whistle sounding.
Pasta & Rice
Pasta and rice will both require water to cook; they are bone dry and need moisture to reconstitute. For pasta, bring water to a boil by
covering pan with the whistle open. The whistle will sound just before the water has come to a boil. Add pasta and cook as recommended by
the recipe.
When cooking rice, use 1/3 less water than the recipe calls for. Combine rice, water and seasoning desired in a cold saucepan. Place over
a medium heat and cover with the whistle open. When the whistle sounds, turn the heat off and let stand for 10 minutes. Brown and whole
grain rice will take 15-20 minutes to fully cook with the heat off. Fluff with a fork and serve.
Breakfast Foods
Eggs: Preheat a skillet or
sauté pan on low to medium heat. Spray evenly with cooking spray, or melt 1 Tbsp of butter in the utensil, and
add the eggs. Avoid stirring, as the thin layer of oil between the cooking surface and the eggs will be removed. Eggs should slide around
easily in the pan when this method is used.
Pancakes: Preheat a griddle or skillet on medium high heat. Test the surface with water drops to make sure it is sufficiently preheated.
Pour the batter directly on the surface - no spray or butter will be necessary. When the batter begins to bubble and the edges dry, use a
spatula to flip the pancakes and brown the other side. Cook for 1 minute and serve.
Hash Browns: Preheat a skillet on medium high heat and add 2 Tbsp of peanut oil or butter. Add frozen hashbrowns in an even layer and
cover with the whistle open. When the whistle sounds, remove the cover and flip the hashbrowns. Cook uncovered until potatoes are browned
and crisp, then serve.
When making fresh hashbrowns, rinse the potatoes after shedding. This will remove much of the natural starch that will absorb an excessive
amount of oil when cooking. Continue cooking as directed.
Organ Meats
Organ meats such as liver, tongue, kidney, heart and brain are typically high in cholesterol, but low in natural fat. You will need to use
a little bit of butter, oil or cooking spray when pan-broiling these foods. Preheat the
utensil, add the oil of your choice and cook as recommended by the recipe.
Cleaning and Maintenance
Your cookware is designed to keep its beautiful shine over a lifetime of use, if properly cared for.
To clean after daily use, first
rinse any excess food particles from the pan. Wash in soapy water,
rinse and dry properly, or; place in
the dishwasher.
To remove a blue or brown heat tint, or white mineral deposits left by some foods, pour a small amount of stainless steel cleanser such as
Steel Glo (provided with your cookware and available by contacting us) or BarKeeper's Friend into a pan and clean with a wet paper towel.
Clean in a circular motion, with the grain. Rinse with hot water and dry thoroughly.
Break-in Process
There is a "breaking-in" process with your cookware. It takes approximately 2 or 3 months for the metal to temper in the pieces you use
most often. Actually, the older your cookware, the better the job it will do and the easier it is to clean.
